300g Chicken Breasts (sliced into strips)
280g (Green Beans and Zucchini)
20g Green Onions
1 tsp White Sesame Seeds
1 tsp Black Mustard Seeds
1 clove Garlic
0.5 tsp Thyme (Fresh or dry)
1 tsp Garam Masala
0.5 tsp Mild Curry Powder (Madras)
Salt and Pepper to taste
In a shallow pan, on a high heat, heat up 20g of ghee. Add seeds to the pan and wait until they start popping. Just as the seeds begin to pop, add chicken. Sprinkle the spices, herbs and garlic evenly on to the chicken and pan fry the chicken. Be careful to not over cook the chicken to avoid drying it. Once chicken is cooked, which takes about 5 minutes because the chicken is in strips, remove from pan into a plate or bowl. Please season with Salt and pepper.
In the same pan, add the remaining 10g of ghee and sauté the green onions. After 1 minute, add the vegetables and toss around in the pan. Add 4 tablespoons of water and place lid on pan to let the vegetables cook. After 2 minutes, stir the vegetables, and replace lid. The veggies should be cooked when the Zucchini's meat has softened and changed colour from white to off white and yellowish. Season with salt and pepper.
